Quick Energy Cookies
  • 1 cup raisins
  • 2/3 cups dried fruit
  • 1/3 cup coconut
  • 1/2 cup not-fat dry milk
  • 1/4 teaspoon baking powder
  • 3/4 teaspoon salt
  • 1/4 teaspoon balking soda
  • 3/4 cup whole wheat flour
  • 1/2 cup granola
  • 1/3 cup wheat germ
  • 1/2 cup butter
  • 1/2 cup peanut butter
  • 1 cup brown sugar
  • 2 egg
  • 2 teaspoons vanilla
  • 5 tablespoons milk (fresh)
  • 1/2 cup sunflower seeds, (raw)
  • 1 cup rolled oats (long cooking)
  1. Cut up dried fruits and raisins and hold aside.
  2. Sift dry milk, baking powder, salt and soda, and mix together.
  3. Stir in flour, wheat germ, and coconut.
  4. Cream butter thoroughly.
  5. cream in peanut butter.
  6. continue creaming and add brown sugar.
  7. Add eggs, beating well.
  8. Add vanilla and mix well.
  9. Alternately add flour mixture with liquid milk.
  10. Stir in sunflower seeds and remaining dry ingredients.
  11. Add cut up fruit until thoroughly distributed.
  12. Drop by tablespoonfulls on ungreased cookie sheet and permit spreading room.
  13. Bake at 375 for 10-12 minutes. ( Allow cookies to dry out on cookie sheet before transferring.)
