Hiker's Cookies
    1. combine the following in a large bowl, then mix at medium speed:
  • 1 cup shortening
  • 2 tablespoons vanilla
  • 1 teaspoon cinnamon
  • 2/3 cup milk
  • 1 cup brown sugar (packed)
  • 2 teaspoon nutmeg
  • 2 eggs
    2. Then add the following and mix at slow speed:
  • 2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon soda
    3. Clean off batters and hand-mix the following:
  • 1/2 jar glazed fruit
  • 1/2 package sliced walnuts
  • 1/2 box raisins
    4. Mix thoroughly, then blend in by hand 4 cups of oatmeal.
  • Press down in a greased 12 x 18 inch cookie pan with the back of a wet spoon.
  • Bake in a 350 degree oven for 20 minutes.
  • Cut into 24 pieces and wrap in aluminum foil or put in plastic bags.
  • (If they're not to be eaten within a few weeks, keep in freezer to prevent mold from forming.)
