SOUR CREAM ENCHILADAS
3 Tbsp. olive oil 1 clove garlic
  • 1/2 cup onion, chopped fine
  • 1/4 cup jalapeno peppers, chopped fine
  • 1 large can tomatoes
  • 1 can tomato paste
  • salt & pepper
  • 1 beef bouillon cube, dissolved in 3/4 cup water
  • 1 can chopped green chiles
  • dash cumin
  • 1 cup grated cheese
  • 1 bunch green onions, chopped
  • Flour tortillas
  • Sour Cream
  1. In oil, sauté onion, garlic & jalapeno pepper.
  2. Stir in undrained tomatoes and tomato paste - bring to a boil;
  3. add beef bouillon, green chiles, cumin, salt & pepper.
  4. Simmer, uncovered, until thickened.
  5. Fill large flour tortillas with sour cream.
  6. Place in casserole dish, cover with sauce, then cheese and chopped green onions.
  7. Bake at 350 degrees 10-15 minutes until cheese is melted.
