CHEESY LASAGNA
  • 1 lb. ground beef, pork or sausage
  • 1 cup chopped onion
  • 2 cloves minced garlic
  • 1 8-oz. can tomatoes, cut
  • 1 8-oz. can tomato sauce
  • 1 6-oz. can tomato paste
  • 1 tbsp. parsley, chopped
  • 2 tsp. crushed basil
  • 1 tsp. crushed oregano
  • 1 tsp. crushed fennel (optional)
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
6 - 8 lasagna noodles 1 egg, beaten 2 cups ricotta cheese 1/2 cup parmesan cheese, grated 1 cup mozzarella cheese

  • Meat Sauce:

    • Brown meat with onion and garlic;
    • drain fat;
    • stir in undrained tomatoes, tomato sauce, tomato paste, and seasonings;
    • bring to a boil;
    • reduce heat; cover and simmer for 15 minutes.

  • Boil noodles while meat sauce is simmering.

  • Cheese filling:
    • Combine egg, ricotta (or cottage cheese if you prefer), 1/4 cup of parmesan cheese and parsley.

  • Layer 1/2 of the noodles in a baking dish;
  • top with half of the cheese filling;
  • top with half of the meat sauce;
  • top with half the mozzarella cheese;
  • repeat layers;
  • sprinkle with remaining parmesan cheese.
  • Bake at 375 degrees for 30 - 35 minutes.
