In a mixing bowl, combine the cheese, lettuce, onions and roast beef.
If the roast beef is in chunks, break apart.
Mix all together.
Spoon 1 tablespoon of the mixture across a corn tortilla and roll it.
Repeat with remaining tortillas.
Put the rolled tortillas (rolled ends to the bottom) in a skillet with hot oil & brown on both sides till golden brown.
I serve the flautas with salsa, guacamole and sour cream.
