CHILE CHEESE QUICHE
  • 1/4 cup flour
  • 1/2 tsp. baking powder
  • 1/2 lb. Monterey Jack cheese, grated
  • 5 eggs, beaten
  • 1 can (4 oz.) green chiles, diced
  • 1/2 pint cottage cheese
  • 1/4 cup butter, melted & cooled
  • dash of salt
  • 1/2 lb. cooked, seasoned pork sausage (optional)
  • 1 9" unbaked pastry shell
  1. Combine flour & baking powder; toss w/ grated cheese.
  2. Add eggs, chiles, cottage cheese, butter & salt.
  3. Blend well.
  4. Arrange cooked sausage in bottom of pastry shell.
  5. Pour egg mixture into pastry shell & bake at 400° for 10 minutes.
  6. Reduce heat to 350° and bake 35 - 40 more minutes.
