MANDARIN ORANGE CHICKEN SALAD
  • 7 - 8 boneless chicken breasts
Marinate thawed chicken overnight in:

  • 4 Tablespoons salad oil
  • 4 Tablespoons orange juice concentrate
  • 4 Tablespoons vinegar
  • 1 teaspoon salt
(My wife, puts 3 or 4 chicken breasts in a large zip-loc bag with 1/2 the marinade and the rest of the chicken and marinade in another zip-loc and throws it all in the fridge)
  1. Simmer chicken and marinade in a large covered skillet until chicken is done.
  2. Discard marinade, cut up chicken into bite-sized pieces and combine with:
  • 3 cups cooked rice
  • 1 cup sliced celery
  • 1 cup slivered almonds
  • 1 1/2 cups mayonnaise
  • 1 small can pineapple tidbits, drained
  • 1/2 - 1 cup whipped cream
  • 1 or 2 cans mandarin oranges, drained (add last)
  • Stir it all up and eat! Really good with orange rolls.
