3 lbs. boneless diced chicken breasts
1 small yellow onion, chopped
8 cloves of chopped garlic
Put these ingredients in a frying pan coated with olive oil and brown until done; set aside
In a cooking pot add the following:
2 cups of drained, stewed Italian tomatoes
2 cups of chicken broth
1 tsp. of parsley
1 bay leaf
1 dozen small white onions
1/2 tsp. of thyme
6 cloves of chopped garlic
1/2 cup of white wine
Simmer for one hour.
After 40 minutes add 1 cup of sliced black olives and chicken cooked earlier
While this is simmering sauté:
1 pound of sliced mushrooms in 1/4 cup butter and the juice of one lemon;
add to pot to simmer
