CHICKEN MARENGO
3 lbs. boneless diced chicken breasts 1 small yellow onion, chopped 8 cloves of chopped garlic

  • Put these ingredients in a frying pan coated with olive oil and brown until done; set aside

  • In a cooking pot add the following:

    • 2 cups of drained, stewed Italian tomatoes
    • 2 cups of chicken broth
    • 1 tsp. of parsley
    • 1 bay leaf
    • 1 dozen small white onions
    • 1/2 tsp. of thyme
    • 6 cloves of chopped garlic
    • 1/2 cup of white wine
    1. Simmer for one hour.
    2. After 40 minutes add 1 cup of sliced black olives and chicken cooked earlier

    While this is simmering sauté:

  • 1 pound of sliced mushrooms in 1/4 cup butter and the juice of one lemon;
  • add to pot to simmer
