Savory Shepherd's Pie
  • 1 poumd ground beef
  • 1/4 cup chopped onion
  • 1/4 cup sweet pepper
  • 1 can (10 1/2 oz.) condnsed vegetable soup
  • 1/8 teaspoon salt
  • 1/8 teaspoon Thyme leaves, crushed
  • 2 cups seasoned mashed potatoes
  1. In skillet, brown beef and cook onion and sweet peppers untiltender.
  2. Stir to separate meat; pour off fat.
  3. Stir in soup, salt, and thyme.
  4. Pour into 1-1/2 quart casserole dish; spoon mashed potatoes around edge of casserole.
  5. Bake at 400 degrees F. for 25 minutes or until hot.
  6. Makes about 3 cups
