Connie's Cucumber Vegetable Salad
  • 1 English cucumber, washed, halved and sliced very thin
  • 1 Red onion, halved and sliced very thin
  • 1 Yellow bell pepper, halved and sliced very thin
  • 1 cup julianne carrots, (from bag)
  • 2 tomatoes, seeded and diced
  • Kosher salt, to taste
  • Fresh ground black pepper, to taste
  • 1/2 cup Italian Dressing
  1. Place diced tomatoes, and cucumber in a large bowl.
  2. Sprinkle with salt and pepper, then set aside.
  3. Prepare rest of the vegetables and add to tomato and cucumbers and mix.
  4. Pour Italian Dressing over vegetables
  5. Salt and Pepper to taste
  6. Let set several hours before serving.
