Pickled Beets
  • 2 (16 oz.) cans sliced beets
  • 1 cup sliced onion
  • 2/3 cups sugar
  • 2/3 cups vinegar
  • 1 cinnamon stick
  • 5 whole cloves
  1. Drain beets, reserving 2/3 cups liquid (if necessary add water to make 2/3 cups of liquid)
  2. In a large pan combine all ingredients, bring to a boil
  3. Simmer 10 minutes
  4. Stirring occasionally.
  5. Refrigerate
  6. Before serving drain and remove cinnamon stick and cloves.
Makes 8 serving
