Yellow Squash
  • 2 pounds yellow, summer squash, sliced
  • 1/2 cup chopped onion
  • 1 cup water
  • 1/2 teaspoon salt
  • 1/4 cup margarine
  • Pepper to taste
  1. combine first 4 ingredients in a large saucepan and bring to a boil.
  2. Reduce heat to medium
  3. cook, uncovered, 15 to 20 minutes or until squash is tender, stirring frequently.
  4. Drain well in a colander and transfer to a bowl
  5. use a potato masher to mash coarsely with butter and pepper.
Yield: 4 servings
