Combine beans, salt pork, and onion in a large heavy saucepan
add water to barely cover.
Bring to a boil:
cover, reduce heat, and simmer at least 1 hour or until beans are tender
at least 30 minutes before serving the beans add the new potatoes and cook until potatoes are done.
