Shrimp Scampi
  • 2 pounds large, unshelled raw shrimp
  • 1/2 cup margarine
  • 1/2 cup salad oil
  • 1/4 cup chopped parsley
  • 6 cloves garlic, crushed
  • 1 teaspoon salt
  • Dash cayenne pepper
  • 1/4 cup lemon juice
  1. Rinse shrimp and remove shells, leaving the tail on, devein
  2. Wash under cold running water
  3. Drain, pat dry with paper towel
  4. Melt margarine in shallow broiler pan or 13/9/2 in baking pan.
  5. Add salad oil, 2 tablespoons parsley, garlic, salt cayenne pepper and lemon juice
  6. mix well
  7. Add shrimp
  8. toss in butter mixture to coat well.
  9. Arrange in single layer in pan
  10. Broil, 4-5 inches from heat 5 minutes
  11. Turn shrimp and broil 5- 10 minutes longer or until lightly brown
  12. Remove shrimp to heated serving platter
  13. Pour garlic mixture over al or pour in small pitcher to pass
  14. Sprinkle shrimp with remaining chopped parsley.
  15. Garnish platter with lemon slices
Note: Shrimp may be bake at 400 degrees F for 8-10 minutes or just until tender, instead of broiling
