Pork Loins and Fried Apples
Source: More Than Moonshine: Appalachian Recipes and Recollections
  • Flour
  • Salt
  • Pepper
  • 4 pork loins
  • Bacon drippings or butter for browning
  • 3 or 4 tart apples
  • 1/2 cup brown sugar
  1. Mix flour, slat, and pepper, and dredge each piece of meat in this mixture.
  2. Melt fat in heavy skillet and brown each piece of meat on both sides.
  3. Turn heat low.
  4. Cut unpeeled apples into quarters and place around the meat.
  5. Sprinkle with brown sugar
  6. cover, and simmer 45-60 minutes.
Serves 4
