Roasted Potatoes and Onions
From: Joan Combs Raynor
  • 8-10 small new potatoes with skin on or
  • 4 large potatoes cut in large cubes with skin on
  • 4 very small onions peeled or 2 large onions cut in large chunks
  1. Grease potatoes and onions with shortening, oil, or olive oil
  2. Place in greased casserole dish
  3. Make sure onions are placed around in potatoes evenly.
  4. Place small pieces of butter or margarine on top of potatoes and onions
  5. sprinkle with salt and pepper
  6. bake at 400 degrees for about one hour
  7. About one-half hour into cooking, turn potatoes and onions over,
  8. sprinkle with salt and pepper
  9. continue to bake until finished
  10. If potatoes are not brown and crispy enough, turn on broiler to finish
  11. do not use cover
These potatoes and onions are delicious with anything but are especially good with steaks.
