Frescati Potatoes

  • 6-8 peeled potatoes(depending on size of your dish & potatoes)
  • 2 rashers of bacon chopped
  • 1 medium onion chopped or sliced(depends on you)
  • 4 buttom mushrooms sliced fine(optional)
  • 1 1/4 cups light cream
  • 1 cup of chicken stock
  • 1/2 cup grated paremsan
  • paprika to sprinkle on top
  • oil
  • Preheat oven to 180 degrees celcius(350 F).
  • Lightly spray your choice of baking dish with oil.
  • Scatter the base with the onion, bacon and mushrooms.
  • Then peel and halve your potatoes.
  • Slice them, but keep them together as your place them in your baking dish on top of the onion mix.
  • Pour in your chicken stock, evenly sprinkle on the grated parmesan and then pour light cream over entire dish.
  • Now spinkle on the paprika.
  • Cook in oven for approximately 1 hour, check with a knife, if still hard inside cook til tender.
  • You may need to cover dish with tin foil if the top over-browns.
  • Serve with nearly anything.
