STEWED POTATOES
  • 8 medium potatoes
  • 1 stalk celery, chopped
  • 1 small onion, chopped
  • 1 can chicken broth or homemade broth
  • 2 chicken bouillon cubes
  1. Peel and dice potatoes.
  2. Put potatoes in pot with bouillon cubes and broth. Set aside.
  3. Saute onion and celery in saucepan with 1/2 stick margarine.
  4. Cook until tender.
  5. Add to potatoes.
  6. Season with salt and pepper.
  7. Add water to just cover potatoes; cover and simmer until thickened and potatoes are tender.
