FRENCH FRIED POTATOES
  • 1 1/2 lb. potatoes (about 4 medium)
  • salad oil or shortening
  1. Prepare potatoes; cut potatoes into lengthwise strips 1/4-inch to 3/8-inch wide.
  2. Fill deep fat fryer or deep saucepan 1/2 full with salad oil or shortening.
  3. Heat to 375 degrees.
  4. Fill basket 1/4 full of potatoes.
  5. Lower into hot fat.
    If fat bubbles excessively, raise and lower the basket several times.
  6. Use long handled fork to keep potatoes separated.
  7. Fry 5 to 7 minutes or until potatoes are golden.
  8. Drain
  9. Salt to taste.
