COTTAGE FRIED POTATOES
  • 6 large potatoes
  • water
  • salt
  • oil
  1. Peel potatoes and cut in half.
  2. Place in pot and partially cover potatoes.
  3. Add salt to taste.
  4. Cook potatoes until done but not mushy.
  5. To test, stick a sharp knife into middle of a potato, if it slides in easily it is done, if center becomes hard, cook a little longer and test again.
  6. When potatoes are done, drain water and let potatoes set in pot.
  7. In a frying pan, cover bottom with oil and heat at medium-high heat.
  8. When oil is hot, pour potatoes in.
  9. Fry each side until a crispy, golden brown.

    Serves 4 to 6.
