To test, stick a sharp knife into middle
of a potato, if it slides in easily it is done, if center
becomes hard, cook a little longer and test again.
When
potatoes are done, drain water and let potatoes set in pot.
In
a frying pan, cover bottom with oil and heat at medium-high
heat.
When oil is hot, pour potatoes in.
Fry each side until
a crispy, golden brown.
