• 12 medium potatoes, pared, quartered
• 1/2 c. butter or margarine
• 1/2 c. half and half
• 2 eggs
• 2 tsp. salt
• 1/8 tsp. pepper
• 1 Tbsp. plus 1 1/2 tsp. grated
• Parmesan cheese
• 3/4 tsp. paprika

1. Cook potatoes in boiling salted water to cover until tender; drain.
2. Beat potatoes, butter, half and half, eggs, salt and pepper until smooth.
3. Spread potatoes in buttered baking dish, 13 1/2 x 8 3/4 x 1 3/4-inches, swirling top with spoon.
4. Heat oven to 350 degrees.
5. Mix cheese and paprika.
6. Sprinkle over potatoes.
7. Bake until potatoes are golden, 25 to 35 minutes.
