NEW POTATOES (With Lemon-Chive Butter)
  • 3 lb. new potatoes
  • salt
  • boiling water
  • 1/2 c. butter or margarine
  • 2 to 3 Tbsp. lemon juice
  • 3 Tbsp. chives
  • lemon slices
  1. Scrub potatoes; pare a strip of skin about 1/2-inch wide around center of each potato.
  2. Place potatoes in medium sauce pan; add 1 teaspoon salt and boiling water to measure 1 inch.
  3. Bring to boiling; reduce heat.
  4. Cook, covered, 20 minutes or until potatoes are tender.
  5. Drain. Return to heat, shaking pan to dry potatoes.
  6. Melt butter in small saucepan.
  7. Add lemon juice, chives and 1/2 teaspoon salt.
  8. Pour over potatoes; toss until potatoes are well coated.
  9. Turn potatoes into heated serving bowl.
  10. Garnish with lemon slices and if desired, sprinkle with chives.

    Makes 8 servings.
