Beef Stir-Fry on Sweet Potato Nest

  • 1 LB Tender Beef, sliced very thin.
  • 1/2 Whole Onion, sliced very thin.
  • 1 Bell Pepper, cut into small wedges.
  • 4 OZ Sliced Mushrooms.
  • 1 Whole Tomatoe, chopped into small cubes or pieces.
  • 1 Clove Garlic, chopped very fine.
  • 2 Cups Grated Sweet Potatoes.
  • 3 TBS Corn Starch.
  • 1 TBS Sugar.
  • 2 TBS Soysauce.
  • 1 tsp Salt.
  • 1 tsp Pepper.
  • 1 tsp Sesame Oil.
  • 2 TBS Oyster Sauce (Soysauce may be substituted if desired.
  • 3 TBS Cooking Oil.
  1. Mix Sugar, Salt, Pepper, Soysauce, Sesame Oil and Marinate the beef 20 minutes.
  2. Meanwhile, grate Sweet Potato, add corn starch and mix well.
  3. Fry and set aside.
  4. Put 3 TBS Cooking Oil in frying pan, add Garlic, Onion and fry until brown.
  5. Add Beef and cook about 2 minutes.
  6. Remove from heat and set aside.
  7. In same frying pan, add 1 TBS Cooking Oil, remaining ingredients and stir in meat.
  8. Place a serving of Sweet Potatoes on plate, place meat and ingredients on top of fried Sweet potatoes and serve warm.
