Chicken Salad
From:Helene Prior
  • 1 lb Boiled Chicken, Deboned and Shredded.
  • 4 Cups Shredded Cabbage.
  • 2 Stalks Celery w/leaves, Sliced Thin.
  • 1/2 Cup Shredded Carrots.
  • 1/2 Small Red Onion, Sliced Thin.

    DRESSING FOR CHICKEN SALAD:

  • 2 Limes or 1 Lemon.
  • 1 Cup White Vinegar.
  • 1 Clove Finely Chopped Garlic.
  • 2 TBS Sugar.
  • 1 tsp Olive Oil (or other vegetable oil).
  • 1 tsp Spice MRS. Dash Salt Substitute.
  • 1/4 Cup Fish Sauce or 1 tsp salt.
  1. Combine ingredients of salad, and Toss.
  2. Combine and mix ingredients for Dressing and pour the dressing over the tossed salad, about 10 minutes before serving.
