2 Cup Coconut Milk. (May substitute with Half & Half)
1 tsp Salt.
1 tsp Sugar.
2 TBS Vegetable oil.
1 Small Red Chilli, chopped fine.
In frying pan add Vegetable Oil, Garlic and Onion.
Fry until
brown.
Add Chicken Pieces.
Fry until Chicken is slightly browned.
Add Lemon Grass, Curry Paste Powder, Sweet & White Potatoe cubes,
Coconut Milk, Salt, Sugar and Chili
cook for about 25 minutes or
until Chicken and Vegetables are done.
Serve with Steamed Rice.
