Sweet Potato Casserole

  • 3 cups sweet potatoes, mashed
  • 1 teaspoon vanilla
  • 1 cup sugar
  • 1 cup brown sugar
  • 2 eggs, beaten
  • 1/4 cup butter, softened
  • 1/2 cup milk
  • 1/2 cup plain flour
  • 1/2 teaspoon salt
  • 1 cup pecans, chopped
  1. Combine first 7 ingredients, mix well.
  2. Spoon into a buttered casserole dish.
  3. Stir butter into sugar and flour stir in nuts.
  4. Sprinkle over potatoes.
  5. Bake at 350 degrees for 30 minutes.

Tip: One cup marshmallows and one cup coconut may be mixed in with nuts if desired.
