Vessie's Baked Pineapple

  • 1 large can of pineapple slices in heavy syrup.
  • Drain pineapple and put syrup in a saucepan.
  • Add a small pinch of salt and about 1/4 pat of butter.
  • Place pineapple slices in a shallow baking dish. It is best to use a rectangular dish where most of the slices will fit in one layer.
  • Place marshmallow in the center of each slice and add a few extras around the edges.
  • Use a regular coffee cup and fill it a little over half full with brown sugar.
  • Add a slightly rounded Tablespoon of cornstarch.
  • Mix thoroughly with the sugar to avoid lumps.
  • Heat syrup to boiling.
  • Add sugar and cornstarch.
  • Stir until it thickens (not too thick to pour).
  • Pour evenly over the pineapple and marshmallows.
  • Bake at 350-375 degrees for 10 to 15 minutes - depending on how closely you can watch it -until the marshmallows get a little brown and flatten out.

    Good either warm or cold.
    Add a pinch of salt and a small piece of butter to the boiling syrup.
