Reunion Broccoli and Fresh Corn Casserole

  • 2 cups steamed broccoli
  • 2 cups fresh corn, cut and scraped from the cob
  • 1/4 cup finely chopped fresh onion
  • 1/2 cup coarse cracker crumbs (plain or cheese as desired)
  • 2 eggs beaten
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  1. Place mixture in well-greased casserole dish.
  2. Mix together 1/2 cup cracker crumbs with 1/3 stick melted butter or margarine and spread over top of casserole.
  3. Bake at 340 degrees until inserted knife comes out clean and casserole is brown on top.
