Potato Casserole
From:Lila Farmer and Hortense Farmer
  • 2 lb. package hash brown potatoes
  • 3/4 stick butter
  • 1 teaspoon salt
  • 1/4 teaspoon Pepper
  • 2 cup chopped onions
  • 1 can cream of chicken soup
  • 8 oz. sour cream
  • 2 cups grated cheddar cheese
  • *1 cup crushed corn flakes
  1. Let potatoes thaw, add 1/2 of melted butter to them.
  2. Mix together:
    • Sour cream,
    • soup,
    • salt,
    • pepper,
    • onions
  3. in bowl and fold in grated cheese.
  4. Add potatoes to mixture and stir well.
  5. Pour into buttered 3-qt. ovenproof dish.
  6. Mix corn flake crumbs with remaining butter and sprinkle over the top.
  7. Cover and Bake at 350 degrees for 45 minutes

*Hortense uses 2 cups of crushed corn flakes
