Daphne Lodge Fried Cat Fish and Hush Puppies
From: Daphne Lodge in Cordele, Georgia
4 pounds of 6 oz. dressed catfish
1 teaspoon salt
2 cups corn meal
vegetable oil
2 cups sweet milk
tartar sauce
Lemon wedges
Rinse fish thoroughly in cold water and pat dry.
Combine cornmeal and salt.
Dip fish in sweet milk and dredge in cornmeal mixture.
Carefully drop fish into hot oil. (350 degrees)
Fry until fish floats to the top and are golden brown.
Drain well on paper towels.
Reserve hot oil for frying hushpuppies.
Transfer fish to a warm serving platter and garnish with lemon wedges.
Serve immediately with tartar sauce.
Yields 4 servings.
Hush Puppies
1/2 cup cornmeal
1 tsp. Baking powder
1/4 tsp. salt
1 small onion, finely chopped
1/2 cup all-purpose flour
1/2 tsp.sugar
Pinch of baking soda
1 egg lightly beaten
1 1/2 tsp. Vegetable oil
Combine cornmeal, flour, baking powder, sugar and salt in a medium mixing bowl. Mix well and set aside. Dissolve soda in buttermilk, in small bowl, mixing well. Add egg, onion and 1 1/2 tsp oil stire well. Add dry ingredients mixing well.
Drop batter by Tablespoons into deep hot oil (350 degrees), cooking only a few at a time. Fry 3 minutes turn and fry an addition 3 minutes or until hushpuppies are golden brown. Drain well on paper towels. Serve immediately.
