Beef Stew

3 pounds boneless stew or short ribs of beef
1 large sliced onion
Cut meat in serving size portions.
Sprinkle each piece with salt and pepper.
Cook in heavy pot on top of stove.
Add enough water to cover bottom of pot.
Put lid on pot.
When meat is cooking well, remove top of pot while cooking on medium heat.
Let meat cook in its own juices.
Turn meat with fork, until brown.
Return lid to pot and cook about 1 hour on low heat.
Check frequently if juices are cooking out then add some water.
When meat is fork tender, add about 2 Tablespoons flour to water and pour over meat.
Stir well.
If broth becomes too thick, add more water.
Simmer until ready to serve.
