Marinated Carrots
From:Nancy Melton Smith
Steam 2 lbs. Carrots sliced into sticks, until tender.

Combine:

  • 3 teaspoons artificial sweetener (liquid) or 1 cup sugar
  • 1 teaspoon dry mustard
  • 1 teaspoon salt (lite)
  • 1 teaspoon black pepper.
Add:

  • 1/2 cup cider vinegar
  • 1/2 cup vegetable oil
  • 1 can zesty tomato soup or Campbell's Italian soup (undiluted)
  • 1 teaspoon Worcestershire sauce
  1. Bring to boil, pour over drained carrots.
Add:

  • 1 medium chopped green pepper
  • 1 medium onion, chopped
  1. Let stand overnight in refrigerator.
  2. Will keep indefinitely
