Cheese Cookies
From: Patsy J. Melton
  • 8 oz. Cream cheese
  • 2 ½ cups flour
  • ½ lb. Butter
  • apricot preserves
  • red raspberry preserves
  1. Using your hands, combine all ingredients except preserves.
  2. Form dough into balls about 1-½ inches in diameter.
  3. Chill over night in refrigerator.
  4. Dust board and rolling pin with powdered sugar.
  5. Roll balls out to about ¼ inch thickness
  6. spread on your choice of preserves and roll up as you would a French pancake.
  7. Put on a cookie sheet and bake 25-30 minutes in 350-degree oven.
  8. When cool dust with powdered sugar.

Recipe came from the dining room at Historic Science Hill in Shelbyville, KY. I have had it for about 4 years and everyone seems to like it.
