Lemon Bars

  • 2 cups sifted flour
  • 2 cups granulated sugar
  • 1/2 cup sifted confectioners sugar
  • 1/3 cup lemon juice
  • 1 cup margarine
  • 1/4 cup all -purpose flour
  • 4 eggs, beaten
  • 1 teaspoon baking powder
  1. Sift together 2 cups flour and confectioners sugar.
  2. Cut in margarine until mixture clings together.
  3. Press in 13 x 9 x 2 inch pan; bake in 350 degree over for 20-25 minutes or until lightly browned.

  4. Beat together eggs, granulated sugar and lemon juice.
  5. Sift together the 1/4 cup flour and baking powder;
  6. sift into egg mixture. Pour over baked crust and bake in 350 degree oven for 25 minutes.
  7. Sprinkle with confectioners sugar;
  8. cool and cut.
