Jam Cake with Date Filling

  • 6 eggs
  • 2c. sugar
  • 2c. jam
  • 4c. flour
  • 1c. butter
  • 1c. lard,
  • 1/2 c. buttermilk
  • 1 t. baking soda
  • 1 t. cinnamon
  • 1t. nutmeg
  • 1t.crushed cloves
  • 1c. black walnuts
  • raisins
  1. Cream sugar, lard, and butter together, add eggs, jam raisins, nuts: beat well.
  2. Add soda to the milk.
  3. Sift flour 3 times, then add cinnamon, nutmeg, cloves.
  4. Beat all together.
  5. Bake at 350 degrees.
DATE FILLING
  • 1c. milk
  • 1/2 c. chopped nuts
  • 1T. flour
  • 1/4 c. sugar
  • 1 egg beaten
  • 1/2 c. chopped dates
  • 1 t. vanilla
  1. Combine milk and dates in top of double boiler
  2. in a bowl combine flour sugar and beaten egg, blending until smooth, add to hot milk.
  3. Cook stirring until thick.
  4. When cool stir in nuts and vanilla.
  5. Chopped cherries can be added for more flavor.

She would bake the cake, and cut in half lengthwise, and fill with date filling. It will make the cake moister, and it is so delicious. As I said, this recipe is very old, but it is GREAT! I have made and served it at Holiday affairs, and even people who turn their nose up at it, asked for the recipe.
