DERBY DAY BLACK BOTTOM PIE
From: Ruth who was born & raised in Eastern Kentucky but now live in Alabama
Very popular dish, originated at the Brown Derby Resturant in Louisville, Ky.
  • 1 env. Knox gelatin
  • 3/4 c. sugar
  • 1/8 tsp. salt
  • 1 egg yolk, slightly beaten
  • 3/4 c. milk
  • 4 sq. Baker's unsweetened chocolate
  • 1 c. icy cold evaporated milk, whipped
  • 1 tsp. vanilla
  • 1 baked 9" pie shell
  • 1 c. cream, whipped & sweetened
  1. Mix gelatin, sugar and salt in top of double boiler.
  2. Combine egg yolk and milk and add to gelatin mixture.
  3. Add 3 squares of the chocolate.
  4. Cook over boiling water until chocolate is melted, stirring often.
  5. Remove from heat and beat with egg beater until smooth.
  6. Chill until thickened.
  7. Fold in whipped evaporated milk and vanilla.
  8. Pile into pie shell and chill. Spread with whipped cream.
  9. Shave remaining 1 square chocolate into long curls with vegetable slicer, sprinkle over pie.
