Batter-Dipped Fried Tomatoes
  • 4 half-ripe medium tomatoes
  • 1/2 cup all-purpose flour
  • 2 1/2 teaspoons salt
  • 2 1/2 teaspoons sugar
  • pepper to tste
  • 3/4 cup evaporated milk
  • Vegetable oil
  1. Wash tomatoes, but do not peel.
  2. Cut into 3/4 inch slices.
  3. Place on paper towels to drain
  4. Combine flour, salt, sugar and pepper
  5. Blend in milk to make a thick batter
  6. Dip floured tomatoes in batter.
  7. Fry in 1/2 inch deep hot oil until golden brown on both sides.
