Kentucky Jam Cake

  • 1 c. soft butter
  • 2 c. sugar
  • 5 eggs
  • 1 c. seedless blackberry jam
  • 3 c. flour
  • 1 tsp. soda
  • 1/2 tsp. salt
  • 1/2 tsp. cloves
  • 1/2 tsp. allspice
  • 1 c. buttermilk
  • 1 c. chopped nuts
  • 1 c. chopped raisins
  1. Cream butter and sugar until light.
  2. Add eggs (1 at a time); beat well.
  3. Add jam; beat well.
  4. Add flour, soda, salt, cloves and allspice alternately with buttermilk; beat until smooth.
  5. Stir in nuts and raisins.
  6. Pour into 4 (9-inch) pans.
  7. Bake at 325 degrees for 35 minutes.
Caramel Frosting for Kentucky Jam Cake
  • 2 c. packed light brown sugar
  • 1 c. sugar
  • 2 Tbsp. corn syrup
  • 3 Tbsp. butter
  • dash of salt
  • 2/3 c. cream
  • 1 tsp. vanilla
  1. In large saucepan, mix ingredients.
  2. Bring to a boil, cover and cook 3 minutes.
  3. Uncover and cook to 236 degrees on candy thermometer or until soft ball forms when dropped in cold water.
  4. Cool 3 minutes.
  5. Beat until thick.

    If too stiff, add a little hot water.
