Jack's Chili

formerly from Nolonsburg, Harlan Co., KY
  • 2 cups each of celery, onions, green/red pepper (either or) and 2 cloves of garlic (all diced).
  • 2 large or 3 medium cans of red kidney beans.
  • 1 large can of tomato puree or sauce,
  • 1 can tomato paste
  • 1-1 1/2 Lb of Hamburger or Deerburger.
  1. In large pot heat 2 Tbsp of oil.
  2. Put vegetables in, stir and cover.
  3. Stir often for about 5 minutes (cover pot when not stirring) or until veggies are soft.
  4. While heating veggies, brown meat, drain fat/water.
  5. Add tomato puree & paste, stir in.
  6. Add beans.
  7. Start off with 2 Tbsp of Chili powder and 2 Tsp cayenne (red) pepper and salt to taste.
  8. Once it starts to boil put on low heat (simmer) for about 2 hours stirring off and on (if its too hot it sticks to the bottom).
