Ham with Red-Eye Gravy
The fried ham lends a slightly reddish tint to pan gravy. Often a few drops of coffee are added for a richer color. Sere with grits or hot biscuits.
  • 1/3 pound of sliced ham
  • 1 tablespoon flour
  • Salt
  • 1 1/2 tablespoons coffee
  1. Cut a piece of fat from the ham and melt in the skillet.
  2. Add the ham and fry over medium heat until the edges are slightly brown.
  3. Remove and keep warm.
  4. Turn the heat to high and stir in the flour.
  5. Cook flour slowly until golden, then add 1 cup water, stirring constantly.
  6. Sprinkle in salt and the coffee.
  7. Turn the heat to medium-low and cook 5-7 minutes, stirring often to keep the gravy smooth.
  8. Return meat to the gravy to heat through.
