Chocolate Almond Scones
  • 3 1/2 cups all-purpose flour
  • 5 teaspoons baking powder
  • 2 Tablespoons sugar
  • 1 teaspoon salt
  • 4 ounces cold butter
  • 4 eggs (beaten)
  • 3/4 cup cream
  • 2 teaspoons almond extract
  • 1 cup chocolate chips
  • 1/2 cup sliced almonds (toasted)
  1. Preheat oven to 425°.
  2. Combine flour, baking powder, sugar and salt.
  3. Cut in butter until it resembles coarse meal.
  4. Add 3 eggs (reserving 1 egg for later use), almond extract and cream.
  5. Stir until soft dough forms, mix in chocolate chips and almonds.
  6. Pat out until 3/4 inch thick.
  7. Cut into diamond shape, brush with reserved egg.
  8. Place on baking pan coated with cooking spray.
  9. Bake for 10 minutes until lightly browned.
  10. Serve warm.

    Yield: 1 dozen
