IRMA’S FISH COCKTAIL
  • 1 lb. corbina, sierra mackerel, red snapper, halibut or shrimps
  • 1/2 cup lime juice
  • 1/2 cup water
  • 2 cloves garlic, roasted, peeled & pureed
  • 1 bay leaf
  • pinch of thyme
  • 1/2 cup finely chopped cilantro
  • 2 green onions or scallions, finely chopped
  • Roma tomatoes, finely chopped
  • 3 Serrano chiles (or more to taste)
  • 2 Tablespoons olive oil
  • salt & pepper to taste
  • avocado slices, for garnish
  1. Cut the fish filets into 1 x 2 pieces.
  2. Mix the lime juice, water, garlic, bay leaf and thyme in a non-reactive (glass or stainless steel) bowl.
  3. Add the fish, stir & cover.
  4. Marinate overnight in the refrigerator.
  5. Add the cilantro, onions, tomatoes, serranos, olive oil, salt & pepper to taste.
  6. Mix well and refrigerate another hour.
  7. Serve garnished with avocado slices, accompanied by crackers or tortilla chips.
