Carrot Cake and Icing

  • 2 cups flour
  • 2 cups sugar
  • 2 tsp. baking soda
  • 1 tsp. baking powder
  • 1 tsp. salt
  • 1 cup cooking oil
  • 4 eggs
  • 2 tsp. cinnamon
  • 3 cups grated carrots
  1. Mix together flour, sugar, cinnamon, baking soda and baking powder.
  2. Add oil, mix well, add eggs and again mix well.
  3. Add grated carrots and mix.
  4. Bake at 350 degrees for about 1 hour.

Icing

  • 1 (8 ounce) package cream cheese
  • 1/2 cup margarine
  • 2 tsp. vanilla
  • 2 cups icing sugar
  1. Cream margarine and cream cheese, add vanilla and icing sugar.
  2. Mix well
  3. spread on cooled cake.
