Rhubarb Custard Pie

  • 2 C. finely cut rhubarb
  • 2 eggs
  • 3 Tbsp flour mixed with 1 C. sugar
  • 1 Tbsp. melted butter
  • Pastry for two-crust pie
  1. Mix all ingredients together
  2. pour into pie shell
  3. Cover with top crust
  4. prick to allow steam to escape
  5. Bake at 375 degrees
  6. approximately 35 minutes
