Chocolate Meringue Pie
From:J. Bain
    Bake and cool a 9" pie crust
Fill with the following:
    In a heavy pot, mix together:
      • 1 1/4 cups sugar
      • dash salt
      • 2 Tablespoonful cocoa
      • 3 Tablespoonful flour
      Add....... 1 cup milk
      • 3 beaten egg yolks (reserve whites)
      • 3 Tablespoonful butter
    1. Bring to a boil, stirring constantly, and cook for about 5 minutes, or until mixture thickens to a pudding like consistency.
    2. Remove from heat, and stir in 1 teaspoonful vanilla.
    3. Pour into cooled pie shell.

    Meringue

    • Beat the reserved egg whites with a dash of salt, a teaspoonful cold water, until frothy.
    • Start adding sugar 1 tablespoonful at the time until 2 Tbs. per egg white have been used, and beat until soft peaks form (peaks that hold shape).
    • Bake about 5 minutes in a preheated oven until lightly browned on top.

    Or Serve With A Cool Whip Topping.
