Sweet Potato Biscuits

  • 2 cups plain flour
  • 1/2 cup butter flav. shortening
  • 1 Tablesp. baking powder
  • 1/2 tsp baking soda
  • 1 tsp salt
  • 3/4 cup buttermilk
  • 1 cup mashed sweet potatoes (cooked)
  1. Heat oven to 425 degrees.
  2. Combine flour, baking powder, and salt in a large bowl.
  3. Combine sweet potato, brown sugar and butter flavored shortening.
  4. Beat at low speed of electric mixer until well blended and fluffy.
  5. Dissolve baking soda in buttermilk, and stir into dry mixture alternately with sweet potato mix.
  6. Roll out to 1/2 inch thick & cut with 2 inch floured cutter.
  7. Place on ungreased baking sheet and bake 15 to 20 minutes.

    Less time with smaller cutter.

I added cinnamon & vanilla for variation.
