Red Lobster Garlic Cheese Biscuits

  • 2 cups minus 1 tablespoon all purpose flour
  • 1 tablespoon + 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • Pinch salt
  • 3 tablespoons stick margarine, chilled
  • 3/4 cup lowfat buttermilk
  • 1 1/2 ozs. sharp cheddar cheese, grated
  • 1/4 teaspoon garlic powder
  1. Preheat oven to 450.
  2. Line baking sheet with parchment or wax paper; spray with cooking spray
  3. In medium bowl, sift together the flour, baking powder, baking soda and salt.
  4. Add 2 tablespoons of the margarine and blend with pastry cutter (I use a fork) until mixture resembles coarse crumbs.
  5. Add buttermilk and cheese; combine with fork, handling dough as little as possible.
  6. Drop by spoonfuls onto prepared baking sheet;
  7. bake until lightly browned 8 - 10 minutes.
    1. While biscuits are baking, in small microwavable bowl, add remaining tablespoon margarine; microwave on High until melted, 5 - 10 seconds.
    2. Stir in garlic powder; set aside
    When biscuits are done, remove from oven and brush margarine mixture evenly over warm biscuits. Remove from baking sheet and serve immediately.

    NOTE: I often find that I need to make a little extra margarine/garlic mixture for drizzling over the top of the biscuits - the more garlic the better!
