"Hillbilly Corn Bread"
From: Darrell
  • 1 cup sifted plain flour
  • 1 cup sifted plain stone ground course yellow corn meal
  • 1 teaspoon salt (optional)
  • 1 teaspoon baking soda
  • 2 teaspoon baking powder
  • 1 tablespoon sugar (optional)
  • 1/4 cup lard (very important...don't use synthetic shortening)
  • 1 cup buttermilk or regular milk
  • 1 egg
  1. Pre-heat oven to 400 degrees
  2. prepare baking pan (cast iron is best) by greasing with butter (butter works best for producing right crust color & texture)
  3. cut shortening into dry ingredients
  4. stir egg into milk combine egg & milk with dry ingredients
  5. stir briefly leaving a lumpy dough
  6. pour into cast iron skillet
  7. bake for 25 minutes
  8. cool in pan 10 minutes
presto...the real stuff

tip: after greasing the baking pan sit it in the fridge while putting together the dry stuff; this seems to help reduce sticking (picked up at Southern Living cookin' school)
