1 cup sifted plain stone ground course yellow corn meal
1 teaspoon salt (optional)
1 teaspoon baking soda
2 teaspoon baking powder
1 tablespoon sugar (optional)
1/4 cup lard (very important...don't use synthetic shortening)
1 cup buttermilk or regular milk
1 egg
Pre-heat oven to 400 degrees
prepare baking pan (cast iron is best) by greasing with butter
(butter works best for producing right crust color & texture)
cut shortening into dry ingredients
stir egg into milk
combine egg & milk with dry ingredients
stir briefly leaving a lumpy dough
pour into cast iron skillet
bake for 25 minutes
cool in pan 10 minutes
presto...the real stuff
tip: after greasing the baking pan sit it in the fridge
while putting together the dry stuff; this seems to help
reduce sticking (picked up at Southern Living cookin' school)
