Sarah's Mom's Meatloaf

  • 2 lbs lean ground beef
  • 1 can Van de Camp's Spanish Rice
  • 1 egg
  • 1/2 to 1 cup bread crumbs (or use sliced bread)
  • salt and pepper to taste
  • Catsup for top of loaf
  1. Bake at 350 for about 1 hr 15 minutes (depending on how you shape your meatloaf). I use an 8 x 8 pan and it takes about 1 hr 15 min or a little longer.
  2. Mix all ingredients until well blended.
  3. Adjust bread crumbs or bread as needed. You don't want a real wet texture. Do not over mix--it will make your meatloaf tough.
  4. Put into pan of your choice.
  5. Put catsup on top.

    Easy and tasty. Feeds about 8 to 10 people, depending on how hungry they are.
