Sausage Zucchini Casserole

  • 1lb ground sausage
  • 1 large green pepper diced
  • 1 large onion (any kind)diced
  • 4tbs butter or butter substitute
  • 2 medium tomatoes (right out of garden!)sliced
  • 1 8oz package shredded mozzerella cheese
  • 2 medium zucchini (right out of garden!)sliced
  1. In medium skillet brown sausage and set aside.
  2. In large skillet, while sausage is cooking, melt half of butter.
  3. Saute onion and pepper until tender-crisp and remove from skillet.
  4. Melt remain- ing butter in large skillet and saute zucchini until tender-crisp.
  5. Layer on top of zucchini in this order...
    • sausage
    • pepper-onion mixture
    • tomato
    • shredded cheese
  6. Put lid on skillet to melt cheese.
